Recipe: Allergen-free Banana Bread (that actually tastes good)

Yum Joy is currently allergic to everything but still wants me to bake. My banana bread has evolved with our changing dietary needs and even Hank likes this version. This version includes vegan substitutions. If you have a reaction to any of The Big-8 allergens, this might be the banana bread recipe for you. It's gluten-free, soy-free, nut-free, and can be made dairy-free and vegan.

Hell Week. I mean month. Here we go, the reset . The fun part this time around, trying to make it work for three people, one who is on a restricted FODMAPS diet and has POTS symptoms. To be perfectly honest, as my daughter has pointed out, she has kept to mostly healthy snacks since arriving. The downside - she's already lost weight which means there will be clothes shopping in our future.

Menu Plan Monday: Baby it's cold outside!

My daughter came home Sunday afternoon and started asking about dinner right away. Grilled eggplant didn't go over so well (she let it get cold), but the grilled cajun salmon was a hit. Then the requests for meals started coming fast and furious. Every single request was a type of chili. Monday : Beef and Bean Chile Verde Tuesday : Three-bean Chili (from scratch) Wednesday: Chicken Chili Chicken chili Thursday : Leftovers Friday : Turkey chili At least she's getting lots of lycopene this week. I'll probably have to make a few batches of gluten-free cornbread to go along with all of this chili. Still feeling a little silly.

Menu Plan Monday: Let's try this again

I admit, I fell off the bandwagon, a few times lately it seems. We've been eating in/out a lot (thanks +EAT24 ), and a lot of rotisserie chicken, and breakfast for dinner, or popcorn for dinner. I just haven't been motivated, you know? So this morning I gave myself a kick in the ass and went through all of my recipes that could easily be converted to dairy-free, soy-free (the hardest part), and gluten-free. I had no idea how many items have soy in them! We're trying out three different butter alternatives right now. I got some ghee at Trader Joe's for myself (going to try Bulletproof coffee - but with k-cups and coconut oil) and two other brands, one explicitly soy-free, the other has soy lecithin, from Ralphs. I also need to find some coconut aminos (soy sauce alternative), but Joy has been OK with me making any Asian meals with the spices and no sauce (like Beef and Broccoli ). Dark Chocolate Heaven

Let me start by saying "mmmmmmmmmm". This pudding beats Jell-O® hands-down. So very yummy. I've been craving chocolate and Fresh and Easy's Dark Chocolate pudding hits the spot. It's thick, creamy, smooth, and most importanly, very chocolaty. The secret? Real ingredients. Milk, chocolate, vanilla, etc. I sighed in pefect contentment as the smooth chocolate pudding hit my expectant taste buds. It was the perfect ending to a stressful night. It's also the perfect size for dessert or a mid-afternoon snack. Bonus, it's all-natural and gluten free. And in my case tonight, guilt-free too.
