Happy Windsday

It's a windy day here in SoCal, with a touch of (un)seasonal crispness. Whenever the weather gets like this I want to get into my kitchen and bake away. My daughter has been asking for banana bread. There are five just waiting to be baked in the freezer. I think I will try traditional and the Paleo Chocolate Banana Bread as soon as I figure out where to buy coconut flour. Better Than Subway Chocolate White Chip Cookies

Early last week I gave my daughter the option of regular chocolate chip cookies or Cranberry White Chocolate Chip cookies. In typical Joy fashion, she ignored the choices and created her own.  Once she tasted these she exclaimed “These are better than the ones at Subway!” – which apparently was her inspiration for asking for chocolate cookies. Chocolate White Chip Cookies Recipe by Annette Holland Adapted from the Chocolate Chip Drop Cookies recipe in the Joy of Cooking Prep time: 15 minutes Cook time: 10 minutes Total time: 30 minutes Yield: About 45 2-inch cookies Ingredients 1/2 cup butter or margarine 1/2 cup brown sugar 1 egg 1/2 teaspoon vanilla 1 cup plus 2 tablespoons all-purpose flour 1/2 teaspoon baking soda 1/2 cup white chocolate chips 1/2 cup Ghirardelli chocolate powder Cooking Directions Preheat oven to 375. Black and White Cranberry Cookies

I made these from a recipe I modified from Allrecipes . My version has less sugar and a combination of chips. Black and White Cranberry Cookies Recipe by Annette Holland Source: web.stagram.com via Annette on Pinterest Prep time: 10 minutes Cook time: 10 minutes Total time: 20 - 30 minutes Yield: 2-3 dozen Ingredients 1/2 cup butter or margarine 1/3 cup packed brown sugar 1/3 cup white sugar 1 large egg 1 1/2 cups all-purpose flour 1/2 teaspoon baking soda 3/4 cup white chocolate chips 3/4 cup semi-sweet chocolate chips 1 cup dried cranberries Cooking Directions Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets. In a large bowl, cream together the butter and sugars until smooth. Beat in the egg. Combine the flour and baking soda; stir into the sugar mixture. That it's actually good and some of my best meals are my "made-up" recipes. Just taking what we have on hand, not using a recipe, and combining flavors in such a way that everyone in my family will eat all the dishes. 2. what one that you have mastered cooking (that you could not cook when you started)? Pancakes. Actually, pancakes are still a work-in-progress, my kids make them better than I do, but at least I don't mix up the baking soda and baking powder anymore. 3. who was your biggest inspiration to start cooking?
