Menu Plan Monday: Costco-sized Chicken Meal Planning

A few weeks ago, I may have mentioned a Costco run. We are still eating the chicken that I picked up. Thank goodness for a large freezer! So obviously, I have to get creative with the chicken prep this week. This might have been easier if I was doing a rubber chicken plan instead.

Menu Plan Monday: Whole Foods is a Zoo

This week I decided to be brave and go to Whole Foods myself instead of having someone else do it. On a Sunday. I thought I had self-control and all that. The fact that 90% of the people in Whole Foods were shopping for other people made it a lot easier, a person couldn't even walk through the aisles! I had to keep parking my cart and maneuvering down aisles trying to find the things on my list. Bonus, I wasn't familiar with the layout, so it was most definitely not an efficient trip. via GIPHY

Menu plan Monday: Keep It Going

Well, color me surprised. An impression was made after doing the 3-Day Refresh . We feel a bit lighter and our brains aren't in total revolt anymore. We planned some of the meals out on the train yesterday, now I just need to go grocery shopping or have someone do it for me.

Menu Plan Monday: Tired of Being Tired

I am officially tired of winter. More than that, my SAD is kicking in hard , despite 8-12,000 IU of Vitamin D nightly. I started writing this post on Sunday, had the draft, found the links to the pretty recipes (need to remember to do that again for next week), and here it is Wednesday, and I am dragging ass. Menu Plan Monday: Fall Feasting

The plan this week was to cook everything on Sunday and reheat throughout the week because evenings this week are hella busy. That didn't happen (but the house is clean!!!) I mean, look at those floors... I managed to menu plan and place my grocery order on Friday for Saturday delivery (yes, my time is worth the cost) so that was an organizational win. Maybe you'll have better luck with AmazonFresh . I'll be able to make and prep at least two meals tonight, probably have leftovers on Wednesday, and we'll have to see how the week works out. Adjusting to being out of the house for 10+ hours a day is still happening. Menu Plan Monday: Where's the Beef?

I have a feeling I have used that title before ... but hey, it's a different year. And now we are going Whole 30 this week because I need it. Sunday : Lemon Pepper Chicken with Zoodles. Seriously, now that my local grocery store carries zoodles I buy 2-4 packages a week. It saves me so much time ! Monday : Stuffed Peppers Stuffed peppers Tuesday : Paleo-Keto Taco  (Salad) with lettuce wraps instead of blue corn tortilla shells. But this was one of the better pictures I have. Menu Plan Monday: Summer Salads

And the cleansing continues. Salads are also great for portion control as well as clearing out the system. Drink plenty of water! Monday : Not feeling well, take out it is. Tuesday : Steak and Dried Cherries Salad - one 3/4lb rib eye goes a long way for two people. I should have taken pictures of the process, but I was really worried about getting it right since I have never  made broccoli soup. Yes, minus the cheddar, but adding some chicken. OK, you can add cheddar for more protein for keto, but not paleo. I ate two servings and wouldn't have minded two or three more. Menu Plan Monday: Currying Favor

This week I just asked what everyone wanted to eat. I'm still not sure I remember everything correctly, but two different kinds of curry were asked for. That works for me. Curry is easily and naturally Whole30 (especially now that I have switched to using coconut cream), and free of everything Joy can't eat without massive modification. Menu Plan Monday: I have no idea what to cook

No really, I am drawing a blank. I'm craving carbs like nobody's business, but you know, inflammation. And if I was just cooking for myself, it would be easier than cooking for the both of us. Last night we had steak salad, IP ate two whole steaks. I think there is a growth spurt on the horizon. Based on what I have in the freezer and minimal shopping, I think I will go with ... a trip around the world. I have severe wanderlust kicking in. Monday :  America - Tilapia (for me) Salmon (for her) with green beans and cherry tomatoes. Menu Plan Monday: Add a Little Spice

I planned this menu last week and never got around to the grocery shopping. We ended up eating whatever I could throw together from the fridge and eating out at least twice. Not good for my budget. Lately, I've had to make even more adjustments to our diet (read that as "lifestyle") and how I cook. In addition to dairy intolerance, tolerable if she takes a Lactaid, my daughter's soy intolerance is a borderline allergy. She can't have anything that contains soy oil (looking at you Trader Joe's snacks), or that has soy lecithin . Did you know that stuff is in practically everything ? I couldn't even buy tapioca for the pie I made (recipe and link coming soon). It tasted so much better than it looks.

I need a sunny outlook this week, so I thought I would theme this week around citrus fruits. Citrus fruit slices (Photo credit: Wikipedia ) Monday : Thai Mango, Pineapple Salad from last week (two items last week made enough for multiple meals). Menu Plan Monday: Let's try this again

I admit, I fell off the bandwagon, a few times lately it seems. We've been eating in/out a lot (thanks +EAT24 ), and a lot of rotisserie chicken, and breakfast for dinner, or popcorn for dinner. I just haven't been motivated, you know? So this morning I gave myself a kick in the ass and went through all of my recipes that could easily be converted to dairy-free, soy-free (the hardest part), and gluten-free. I had no idea how many items have soy in them! We're trying out three different butter alternatives right now. I got some ghee at Trader Joe's for myself (going to try Bulletproof coffee - but with k-cups and coconut oil) and two other brands, one explicitly soy-free, the other has soy lecithin, from Ralphs. I also need to find some coconut aminos (soy sauce alternative), but Joy has been OK with me making any Asian meals with the spices and no sauce (like Beef and Broccoli ). Menu Plan Monday: Dietary Restrictions and a Picky Eater

My daughter is a picky eater. In the last three months she has developed intolerances to wheat, dairy, and soy. Just need nuts and seafood to be complete (knock on wood). Creating menus each week just got more interesting . Luckily, she can eat just about anything from El Pollo Loco, but we have both gotten tired of that in the last month. Cooking from scratch in 30 minutes or less (most nights)... Monday: Beef and Broccoli - minus the soy sauce and water, so I guess it was more of a stir fry, but she had multiple servings. Menu Plan Monday: Brought to You By the Letter 'T'

I must be doing something right. Last week my massage therapist (who sees me every week) said that I was looking slimmer (woot!) and my daughter said I felt skinnier when she hugged me (let's ignore the fact that she's on a growth spurt and that her arms are probably longer). In reality, I think my rather slow detox from my road trip was finally taking effect. At least the bloat is gone and I am back to my pre-trip weight (only 15lbs to go!). However, getting rid of the carb cravings re-created on that trip are something that I struggle with every day ( as I put down the Mrs. Fields triple-chocolate cookie and practice something resembling self-control instead of emo-eating )... I also have been convenience eating or not eating properly at all since it's just myself and really, why should I just cook for myself? Almost 30 years of cooking for other people, I have a hard time cooking for one. Even if I know I will be eating the leftovers for lunch the next day. This week...

Menu Plan Monday: Why Cook When You Can Toss?

Well, this past week was nice, weather-wise, and I forgot to menu plan, so there was a lot of cleaning out the fridge and using a few recipes from the previous week . The lentil stew and red beans and rice made meals for multiple days. In fact, I'm still eating lentil stew. I think I will freeze the rest for a rainy day.  And then I took a look at the upcoming weather and decided that it will just be too damn hot in my apartment when I get home to cook. It's a pleasant 70-something outside now, but between 4-7PM my apartment heats up into the high 80s. The downside of living on the top floor. I seem to have misplaced the lid to my slow cooker. Menu Plan Monday: Balance

I'm feeling a little bit under the weather as I plan this week's menu and I'm trying to balance the need for comfort food with sticking to my diet -- pardon me, lifestyle. Paleo is a lifestyle and the only way I have been able to lose and at this point, maintain and not go back up to 180 or higher . Especially since for the longest time my back didn't allow me anything more than walking. I got on my scale this morning for the first time in about 6 months and was so pleased to see that I have only gained .5lbs, which I know is from emo-eating (work has been extremely stressful and, well, Mrs. Fields is right downstairs at work). For those of you who are following my weight-loss journey, it appears I've been holding steady between 168/169 since November of 2013.
