Menu Plan Monday: February 17- 24

Sometimes it takes me a little bit to get back into the proverbial saddle. I planned for all of January, and most of February is in my Passion Planner , I just haven't gotten around to that final step of putting it on the blog. Lucky for you, I'm feeling extra motivated today, so here you go, this week's menu plan.

January 2019 Whole 30

Hell Week. I mean month. Here we go, the reset . The fun part this time around, trying to make it work for three people, one who is on a restricted FODMAPS diet and has POTS symptoms. To be perfectly honest, as my daughter has pointed out, she has kept to mostly healthy snacks since arriving. The downside - she's already lost weight which means there will be clothes shopping in our future.

Recipe: Everything Free Beef Stroganoff

Yum Trust me. It tastes amazing. Even the picky teenager liked it. Beef Stroganoff over Zoodles I've been craving beef stroganoff the way a pregnant woman craves pickles and ice cream. But, it doesn't fit my current dietary needs and is a trigger for every one of my daughter's food intolerances. And then I had a dream. I've been doing substitutions long enough that it finally came to me, just took a little longer than normal with everything going on lately. Low-Carb, Lacto-Paleo, Gluten-Free, Lactose-Free, Ketogenic Beef Stroganoff Ingredients: 2tbsp Coconut oil 1.5 - 2lbs beef (top round sirloin works well) 3 cups mixed mushrooms 1 cup pearl onions 1 cup beef broth garlic, sea salt and pepper to taste 1.5 cups lactose free sour cream Zucchini Noodles  or  Gluten-Free Supergrain Pasta Shells I don't tend to move things in and out of a pan, so this recipe skips all of those steps. However, traditional orange chicken is breaded in wheat flour and the sauce contains soy. I modified my old recipe and came up with gluten and soy free orange chicken tenders. They were quite delicious despite not having coconut aminos as a soy sauce replacement. Menu Plan Monday: Adjustments

I was going through a downtime and didn't realize it. S.A.D can affect you even if it's sunny and 90+ degrees outside, because you aren't getting outside... because it's to damn hot! I was only getting maybe 15 minutes of sun and had stopped taking my Vitamin D supplements. All the cues were there -- ennui, lack of interest, no motivation, and I just wanted to sleep. I was blaming the heat. I mean, it's draining when you feel like you're melting! The week before I had been in more humidity than I like. You shouldn't feel like you'lre breathing underweater all the time. Thank goodness for AC. Anyway, I had gotten off track, no menu planning in weeks, and even though my daughter kept asking me to go to store, I kept putting it off, to the point that I ordered in at least twice last week and cooked just the very basics for her. Beautiful Breakfast

I had the most beautiful breakfast - a buckwheat flour  crêpe with fresh berries and some of the best whipped cream I have ever tasted. Great way to start the day. Now I just have to find a business center around here. I forgot to print out my itinerary for NAB Show as well as my badge info.
