Recipe: Broccoli Chicken Soup

I should have taken pictures of the process, but I was really worried about getting it right since I have never  made broccoli soup. Yes, minus the cheddar, but adding some chicken. OK, you can add cheddar for more protein for keto, but not paleo. I ate two servings and wouldn't have minded two or three more. Sometimes I can't pull dinner out of a hat. I have the ingredients but no clue how to pull them together. It's rare. Today was one of those days. We are on a mission to eat everything in the house before going grocery shopping again. Too much food has been going to waste. African Sweet Potato Soup

Tweet Ingredients : 1 small onion - chopped 2 garlic cloves - minced 1 teaspoon canola oil 1 quart chicken stock 1 sweet potato (or yam depending on where you live) - peeled and cubed 1 potato - skin on, cubed 1 can diced tomatoes (15oz) 1 teaspoon ground cinnamon 1 teaspoon cumin 1 teaspoon curry powder 1/4 teaspoon cayenne 1 teaspoon sea (or kosher) salt. 1/4 cup chunky peanut butter. Directions : Sauté the onion and garlic in the canola oil. Add the chicken stock, sweet potato, potato, diced tomatoes, spices and peanut butter. Simmer 10-12 minutes.  (You can end the cooking here or proceed to step 4) (This is where it exploded on me . The consistency didn't look right and I knew my kids would not eat sweet potatoes looking the way they did.) Take 1/3 to 1/2 of the soup and blend in a blender. Fall has arrived

Ok, so the official start of fall was Sept. 22 but in SoCal that's still summer. And up until a few days ago the weather was definitely NOT autumnal. And it was hotter in the Valley where I work. So today, it rained in the morning and stayed cloudy and cool all day long. My son made reference to how he missed Oregon and I was finally prompted to make potato soup. And so starts Autumn in the Holland household. Josh couldn't wait to dig in. Let me know if you want the recipe. Broccoli Cheese Soup Broccoli cheese soup is made with fresh broccoli. INGREDIENTS: 1 bunch broccoli, about 1 1/4 pounds, washed and trimmed 2 cups sliced onions 5 tablespoons butter or margarine 7 cups chicken broth, divided 1 teaspoon dried leaf oregano, crumbled 1/4 cup flour 2 tablespoons Dijon mustard 1/8 teaspoon pepper 1 cup milk 2 cups shredded sharp Cheddar cheese PREPARATION: Cut florets off broccoli and divide into small sections. Simmer in lightly salted water for 2 minutes; drain and immerse in cold water to stop cooking then set aside. Cut stalks into small pieces; place in a large saucepan. Add sliced onions and 3 tablespoons of butter to saucepan; sauté over medium low heat for 5 minutes. Add 3 cups chicken broth and oregano to the saucepan; simmer 20 to 30 minutes.
