Menu Plan Monday: Fall Feasting

The plan this week was to cook everything on Sunday and reheat throughout the week because evenings this week are hella busy. That didn't happen (but the house is clean!!!) I mean, look at those floors... I managed to menu plan and place my grocery order on Friday for Saturday delivery (yes, my time is worth the cost) so that was an organizational win. Maybe you'll have better luck with AmazonFresh . I'll be able to make and prep at least two meals tonight, probably have leftovers on Wednesday, and we'll have to see how the week works out. Adjusting to being out of the house for 10+ hours a day is still happening. Menu Plan Monday: Summer Salads

And the cleansing continues. Salads are also great for portion control as well as clearing out the system. Drink plenty of water! Monday : Not feeling well, take out it is. Tuesday : Steak and Dried Cherries Salad - one 3/4lb rib eye goes a long way for two people. Wednesday : Grilled Chicken Strawberry Avocado Salad Thursday : Broccoli Chicken Salad with dried cranberries, modified from this recipe. Friday : Cirque! Hopefully dinner out.

Menu Plan Monday: Dietary Restrictions and a Picky Eater

My daughter is a picky eater. In the last three months she has developed intolerances to wheat, dairy, and soy. Just need nuts and seafood to be complete (knock on wood). Creating menus each week just got more interesting . Luckily, she can eat just about anything from El Pollo Loco, but we have both gotten tired of that in the last month. Cooking from scratch in 30 minutes or less (most nights)... Monday: Beef and Broccoli - minus the soy sauce and water, so I guess it was more of a stir fry, but she had multiple servings. Tuesday:  Avocado Strawberry Spinach Salad with Poppyseed Dressing Wednesday:  Beef & Bean Chile Verde  - I make mine with Fresh and Easy Salsa Verde Thursday:  Chicken Avocado Salad Wraps Friday:  Primal Jambalaya  - minus the cauliflower rice Saturday:  Paleo Avocado Turkey Burgers  - reminds me of the burgers at the District Pub (also much cheaper to make at home). BLAST - Bacon, Lettuce, Avocado, Salmon, Tomato Recipe by Annette Holland Kicking up the standard BLT with salmon and avocado. 5 stars stars Prep time: 5 minutes Cook time: 20 minutes Total time: 25 minutes Yield: 4 pita sandwiches Ingredients 1 lb skinless salmon fillets 4 slices (turkey) bacon, crumbled 1 cup lettuce 2 avocados 1 beefsteak tomato, sliced to taste Cajun seasoning for dry rub pita wraps mayonnaise or mustard Cooking Directions Heat grill to medium high. Sprinkle the salmon with the Cajun seasoning on both sides and place on grill. Cook about 10 minutes or until the salmon releases on its own. Flip to cook the other side. Menu Plan Monday: Let's Get Back To Clean Eating

The last few weeks (months?) I have been lazy and fell back into some old habits. The result, I've gained back some of my hard-lost weight, I feel weak and tired all the time, and I crave carbs like nobody's business. To the point where I resorted to eating a piece of (Orowheat Honey Wheat Berry) bread dry. No butter (apple or otherwise), and once with chocolate coconut frosting on top. I mean, who does that???? You don't even want to know how much chocolate I have eaten in moments of emotional stress, or boredom. It doesn't help that the office candy lady now sits right next to me ... This week I have endeavored to eat more healthily and get back on the mostly paleo diet that has been working wonders for me (losing weight with minimal high impact exercise? Sign me up!). Dinner menu is below, IP had some input, and the Teen is back in town so I'll have to adjust how much I cook for the next three months. My lunches for the week will either be leftovers or Tuna...
