Menu Plan Monday: Add a Little Spice

I planned this menu last week and never got around to the grocery shopping. We ended up eating whatever I could throw together from the fridge and eating out at least twice. Not good for my budget. Lately, I've had to make even more adjustments to our diet (read that as "lifestyle") and how I cook. In addition to dairy intolerance, tolerable if she takes a Lactaid, my daughter's soy intolerance is a borderline allergy. She can't have anything that contains soy oil (looking at you Trader Joe's snacks), or that has soy lecithin . Did you know that stuff is in practically everything ? I couldn't even buy tapioca for the pie I made (recipe and link coming soon). It tasted so much better than it looks.

BLAST - Bacon, Lettuce, Avocado, Salmon, Tomato Recipe by Annette Holland Kicking up the standard BLT with salmon and avocado. 5 stars stars Prep time: 5 minutes Cook time: 20 minutes Total time: 25 minutes Yield: 4 pita sandwiches Ingredients 1 lb skinless salmon fillets 4 slices (turkey) bacon, crumbled 1 cup lettuce 2 avocados 1 beefsteak tomato, sliced to taste Cajun seasoning for dry rub pita wraps mayonnaise or mustard Cooking Directions Heat grill to medium high. Menu Plan Monday: Balance

I'm feeling a little bit under the weather as I plan this week's menu and I'm trying to balance the need for comfort food with sticking to my diet -- pardon me, lifestyle. Paleo is a lifestyle and the only way I have been able to lose and at this point, maintain and not go back up to 180 or higher . Especially since for the longest time my back didn't allow me anything more than walking. I got on my scale this morning for the first time in about 6 months and was so pleased to see that I have only gained .5lbs, which I know is from emo-eating (work has been extremely stressful and, well, Mrs. Fields is right downstairs at work). For those of you who are following my weight-loss journey, it appears I've been holding steady between 168/169 since November of 2013. Recipe: Bacon Pear Grilled Cheese Sandwich

I'm allergic to pork, so I substitute turkey bacon for regular bacon. I think this would be pretty darn tasty with gouda cheese and less butter as well. That's my next experiment. The bread I used was from La Brea Bakery and conveniently sold in my local grocery store (their bread is to die for). Menu Plan Monday: Back To School

Summer isn't over! What do you mean school is starting tomorrow?!?! That's me crying, not my daughter. I actually miss the days when school started the Monday after Labor Day. That makes sense . My daughter is mostly excited that school is starting even though in the last three weeks there was a major SNAFU and I had to pull a miracle out of my ass (with help from the The Teen (who is now the the College Student, stop growing already!) and her dad. But she's enrolled, excited, school clothes and supplies for the first day obtained and I was good and planned the menu yesterday morning so the Teen/College Student could go grocery shopping for me today (Thank goodness for Fresh and Easy Coupons !) because I spent yesterday re-arranging furniture, buying new seat cushions for the dining table and getting a migraine.
