Menu Plan Monday: Why Did the Chicken Cross the Road?

To get in mah belly , apparently. In looking for variety and ease this week, most of my meals call for chicken. Lunch again this week will be either tuna avocado salad or leftovers. Monday : Stuffed sweet potatoes (with turkey bacon) Tuesday : Pecan Crusted Chicken (or Steak Salad if the heat is too much) Wednesday : Zucchini Parmesan Thursday : Chicken Waldorf salad Friday : Blackened Chicken with zoodles and avocado cream sauce So, what are you eating this week? Menu Plan Monday: Soup's On!

Winter is trying to make and appearance in SoCal this week! Perfect weather for savory, hearty, warming soup! Bonus, it's frugal (because I have most of the ingredients on hand. My freezer will empty after this). Monday : Primal Jambalaya (as many times as I have made this, we decided to drop the cauliflower) Tuesday : Beef Stew - I've opted to give my daughter some carbs during the week to keep her carb withdrawals under control. It keeps us both sane. Wednesday : Apple Chicken Sausage & Spinach Soup (also dropped the cauliflower rice from this one, and we're not big on kale, so I sub in spinach). Thursday : White Bean Chicken Chili Friday : Zuppa Toscana - the other way my daughter will eat spinach. It's the only green vegetable other than Brussels sprouts that she has a problem with. Menu Plan Monday: Clean out the Fridge

Well, the first holiday feast is over, the leftovers are almost completely gone (enough turkey left for one more sandwich) and I have $40 left in my grocery budget. It's going to be interesting this week. Luckily, chicken and fish come in big bags, so I have breasts, thighs, salmon and pollack. And my daughter doesn't mind a little variety. It's easier to make sure the food doesn't go to waste when I have her input. Monday : Chicken Curry with potatoes and spinach Tuesday : Cajun Salmon   with rice pilaf and steamed veggies Wednesday : Baked Parmesan Alaskan Pollack Thursday : Chicken Broccoli Casserole Friday : Leftovers (if there are any, I've gotten better at cooking the right portions). How I Really Spent Halloween

So, Halloween was not spent how I expected. As usual on a Saturday I was flippin' exhausted and napped. I had hoped to have enough energy to take Joy to a local church's Fall Festival instead of trick-or-treating (since she cleaned up at my office anyway). But instead, we ended up doing a little bathroom chemistry with my mom and watching Prince Caspian . The Process Pour 1 cup baking soda into clogged drain. It's O.K. if it doesn't go all the way down Pour 3 cups of boiling water on top of the baking soda.  Follow with 1 cup white vinegar Repeat as necessary until drain is clear. Instead of using Drano, we used this process and we had all the items on hand (Costco-sized bag of baking soda helped) and it only took two repitions to clear my mom's drain. It took three on mine. Another bonus, instead of waiting 15 minutes per the Drano instructions, this took only as long as boiling 3 cups of water :-)
