Menu Plan Monday: Whole Foods is a Zoo

This week I decided to be brave and go to Whole Foods myself instead of having someone else do it. On a Sunday. I thought I had self-control and all that. The fact that 90% of the people in Whole Foods were shopping for other people made it a lot easier, a person couldn't even walk through the aisles! I had to keep parking my cart and maneuvering down aisles trying to find the things on my list. Bonus, I wasn't familiar with the layout, so it was most definitely not an efficient trip. via GIPHY

Menu Plan Monday: I have no idea what to cook

No really, I am drawing a blank. I'm craving carbs like nobody's business, but you know, inflammation. And if I was just cooking for myself, it would be easier than cooking for the both of us. Last night we had steak salad, IP ate two whole steaks. I think there is a growth spurt on the horizon. Based on what I have in the freezer and minimal shopping, I think I will go with ... a trip around the world. I have severe wanderlust kicking in. Monday :  America - Tilapia (for me) Salmon (for her) with green beans and cherry tomatoes. Tilapia Tuesday :  Mexico - Lettuce Wrapped Tacos (hey, it's Tuesday) Taco fixings Wednesday : India - Chicken Curry (yes, I add peas and carrots to my curry). Chicken Curry Thursday : Caribbean - Jerk Chicken - sweet potato for me, mixed veggies for her. And maybe some plantains. Nom. Menu Plan Monday: Cooking for One

I hate hate hate hate hate cooking for only myself! Last week I pretty much refused to, since getting lunch was usually large enough to be two portions. But, by the weekend I was down for the count. No energy, back problems, not completely attributed to the change in weather, but more likely to the increased gluten (bread) intake (yes, I have been emo-eating again. Peppermint brownies, can you blame me?). So, yesterday I started cooking for myself again and clean eating. Sunday : Ghetto Fabulous Claim Jumpers Jamaican Jerk Chicken and Sweet Potatoes Monday: Honey Mustard Chicken Tenders (no breading) with steamed veggies Tuesday:   Tilapia with green beans and grape tomatoes Wednesday: Cedar Planked Maple Salmon  - or leftovers from work holiday party. I'll be making Sweet Potato Pie . No, it does not taste like pumpkin pie, it tastes MUCH better. Thursday:   Curry Shrimp and Spinach Friday:  Something with steak. Saturday: Primal Jambalaya

Menu Plan Monday: Brought to You By the Letter 'T'

I must be doing something right. Last week my massage therapist (who sees me every week) said that I was looking slimmer (woot!) and my daughter said I felt skinnier when she hugged me (let's ignore the fact that she's on a growth spurt and that her arms are probably longer). In reality, I think my rather slow detox from my road trip was finally taking effect. At least the bloat is gone and I am back to my pre-trip weight (only 15lbs to go!). However, getting rid of the carb cravings re-created on that trip are something that I struggle with every day ( as I put down the Mrs. Fields triple-chocolate cookie and practice something resembling self-control instead of emo-eating )... I also have been convenience eating or not eating properly at all since it's just myself and really, why should I just cook for myself? Almost 30 years of cooking for other people, I have a hard time cooking for one. Even if I know I will be eating the leftovers for lunch the next day. This week...

To get in mah belly , apparently. In looking for variety and ease this week, most of my meals call for chicken. Lunch again this week will be either tuna avocado salad or leftovers. Menu Plan Monday: Week of December 3

I couldn't think of any clever title for this week. C'est la vie. I'm too tired from playing Ingress (more on that later). It's almost dinner time and I let my daughter pick tonight's meal - chili dogs. The rest of the week I'll be picking. We're still cleaning out the fridge and freezer and making everything last as long as it possibly can. Monday : Chili dogs - cheap and easy Tuesday : Ghetto fabulous adaptation of Claim Jumper's Jamaican Jerk Sweet Potato Chicken (because I have like 2.5 lbs of sweet potatoes left) Wednesday : Chicken and broccoli casserole (this will probably last the rest of the week) Thursday : Lentil Stew Friday : YOYO Bonus recipe : African Sweet Potato Soup -- I may have this instead of a chili dog. Since cutting out most carbs (meaning rice, idaho potatoes, and most breads), I really don't crave them anymore. Except for when I go on a cookie baking blitz . What are you cooking this week? Menu Plan Monday: March 12

This week I still have a lot of ingredients from last week . The White Bean and Chicken Saute lasted two days plus lunches, the Moroccan Chicken Stew lasted 2+ days (it's still in the fridge. Apparently I'm the only one who really likes couscous when it's made from scratch and not packaged). The Thai Chicken/Mango/Pineapple was a hit and disappeared pretty quickly. Lesson learned : Only one stew/soup per week! So this week we'll have: Monday : Steak Salad -- I started marinating the steak last night for dinner but other plans got in the way so we're having it tonight. Tuesday : Curried Veggie Cubes Wednesday : Crockpot night - lets try that Sweet Potato and Chicken Stew again. Thursday : Cajun Salmon with veggies for me and rice for the kids (I cut out starches for myself and the Hunk most nights) and Rosemary pork chop for the one person who doesn't like salmon. Friday :  Zucchini Parmesan with salad greens Saturday :  It's St. Patrick's Day...
