Menu Plan Monday: Summer Salads

And the cleansing continues. Salads are also great for portion control as well as clearing out the system. Drink plenty of water! Monday : Not feeling well, take out it is. Tuesday : Steak and Dried Cherries Salad - one 3/4lb rib eye goes a long way for two people. Wednesday : Grilled Chicken Strawberry Avocado Salad Thursday : Broccoli Chicken Salad with dried cranberries, modified from this recipe. Friday : Cirque! Hopefully dinner out.

Menu Plan Monday: Why Cook When You Can Toss?

Well, this past week was nice, weather-wise, and I forgot to menu plan, so there was a lot of cleaning out the fridge and using a few recipes from the previous week . The lentil stew and red beans and rice made meals for multiple days. In fact, I'm still eating lentil stew. I think I will freeze the rest for a rainy day.  And then I took a look at the upcoming weather and decided that it will just be too damn hot in my apartment when I get home to cook. It's a pleasant 70-something outside now, but between 4-7PM my apartment heats up into the high 80s. The downside of living on the top floor. I seem to have misplaced the lid to my slow cooker. So .... Chicken curry salad sandwich

Chicken curry salad sandwich Originally uploaded by Nannerlady Yesterday I had lunch at Mendocino Farms with Oakley . Thank goodness I have a foodie for a friend. This sandwich was amazing. roasted chicken breast with green apples and dried cherries in a light mango curry dressing (no mayo), cucumber, organic farmer's market greens (like a spring mix), cranberry chutney, red pepper compote on curcama hazelnut bread I had to eat it in two sittings it was so filling. I've never had curcama hazelnut bread before, and I am not a huge fan of hazelnuts, but it worked for this sandwich. By the way, what is curcama? I couldn't find anything in English that wasn't related to either stress or GI cleansing when I looked it up.

Mouthwatering Monday: Tangy Broccoli Summer Salad

Summer is perfect for salads using in season fruits and vegetables. This salad was a hit at a 4th of July potluck this past weekend. Josh used to like it with strawberries. They add an extra bit of sweetness. Ingredients: 1 cup (fat-free) mayonnaise 2 tablespoons sugar 2 tablespoons vinegar 1 medium bunch broccoli, cut into flowerets (about 6 cups) 4 cups loosely packed torn spinach 1/2 cup thinly sliced red onion 1/4 cup crumbled bacon 1/4 cup raisins optional: strawberries and pine nuts Directions Mix dressing, sugar, and vinegar in a large bowl. Add remaining ingredients, mix lightly. Refrigerate for at least an hour.
