Recipe: Allergen-free Banana Bread (that actually tastes good)

Yum Joy is currently allergic to everything but still wants me to bake. My banana bread has evolved with our changing dietary needs and even Hank likes this version. This version includes vegan substitutions. If you have a reaction to any of The Big-8 allergens, this might be the banana bread recipe for you. It's gluten-free, soy-free, nut-free, and can be made dairy-free and vegan.

30 Minute Banana Bread Muffins

No really. It truly only takes about 30 minutes to throw these together with a potato masher and hand-mixing. That might be why I used to make them every Sunday when my son was much younger. I would make a double batch and we would have breakfast and snack for the week. Very handy for an overworked student/single-mom. Some things never change.
