Ghetto Fabulous Chicken Cordon Bleu

Sometimes you just don’t have “quality” (high-priced) ingredients on hand, but you have have the general idea for something. A typical chicken cordon bleu recipe calls for the following ingredients: 6 skinless, boneless chicken breast halves 6 slices Swiss cheese 6 slices ham 3 tablespoons all-purpose flour 1 teaspoon paprika 6 tablespoons butter 1/2 cup dry white wine 1 teaspoon chicken bouillon granules 1 tablespoon cornstarch 1 cup heavy whipping cream But sometimes all you have on hand is: chicken breast tenders bleu cheese dressing (with actual bleu cheese crumbles) canadian ham mixed veggies Set oven to broil. In an oven safe pan sauté the chicken in butter or olive oil. When browned, pour dressing over chicken and top with ham.  Place in oven and broil until the dressing forms a crust – about 5 minutes.  Enjoy! (Tastes better than the picture makes it look)

Portobello Mushrooms with Summer Squash

We're back to almost vegetarian in my household and Sunday nights are either gourmet or leftovers. We're out of leftovers. Tonight's dinner is Portobello mushrooms with a side of summer squash and baked potatoes. It took about 20 minutes - less if your grill doesn't run out of gas! Mouthwatering Monday: Shortcut Red Beans and Rice

Red Beans and Rice I love foods with Cajun spices even though I was raised in CA and not introduced to them until college. I haven't made Red Beans and Rice in a long while (the proper way takes quite some time), but I got this made in less than an hour. When you have all the ingredients on hand I think this falls into one of those 30-minute-or less recipes. 

Ground Turkey Casserole

Kid-tested. Mom approved. This is a very basic casserole dish that can be added to and adjusted in many different ways. My picky 4-yr old niece loves it this way though. Just add veggies on the side. INGREDIENTS * 1 pound ground turkey * 1 (15 ounce) can tomato sauce * 1 (8 ounce) container sour cream * 1 (8 ounce) package cream cheese * 1 (12 ounce) package uncooked egg noodles * 2 cups shredded Cheddar cheese * salt and pepper to taste Directions: 1. Preheat oven to 350 degrees F. 2. In a large skillet over medium-high heat, season and sauté the ground turkey for 5 to 10 minutes, or until browned. Drain the turkey, stir in the tomato sauce, and set aside. In a medium bowl, combine the sour cream and cream cheese. Mix well and set aside. 3. Cook noodles according to package directions. Place them into a 9x13-inch baking dish, then layer the turkey mixture over the noodles. Then layer the sour cream mixture over the turkey, and top with cheese. 4. Bake at 350 degrees F ...
