Menu Plan Monday: Meal Prep For Stress-Free Weekday Nights

Yeah, the vegetarian kickstart didn’t go as planned. Completely derailed, but what else is new. I have finally admitted that I need to do meal prep for our different dietary needs/desires/my own personal sanity. I don't need to eat as often and he does to be on strict IF + Keto, and IP is gone for the next two months, so I can ease up on the FODMAP+ Paleo AIP side prep.   So … we’re (I'm)going to attempt meal prep this Sunday (guess who gets to clean the fridge first) and see how it goes. I’ve done it before with some success and much grumbling. Him, not so much, but I also don’t have an issue with food. I exercise so I can eat. I know that I love to eat and try new flavors (eating the same thing week in and week out will make me fall off sooner any "diet"faster than anything else), and I know when I am full and stop eating. My issues these days are hormone imbalance (birth control keeps me sane but also packs on the pounds) and lack of exercise plus a shitt...

Menu Plan Monday: February 17- 24

Sometimes it takes me a little bit to get back into the proverbial saddle. I planned for all of January, and most of February is in my Passion Planner , I just haven't gotten around to that final step of putting it on the blog. Lucky for you, I'm feeling extra motivated today, so here you go, this week's menu plan.

Sometimes you have to go to extremes before you find a good middle ground. I've been doing great on a  loosely paleo-based diet lifestyle change for over a year now. My current weight is in the high 160s, but with the weekly Fitbit Challenges, I've gotten to a point where people are telling me I can stop losing now. Menu Plan Monday: Reunion Cleanse

I was looking for a few new recipes over at PaleOMG (like OMG, best desserts for this plan!) and realized that I do sort of cleanse on Mondays after the weekend. Though, after our amazing reunion weekend, we started last night with stuff I pulled from the freezer. Family sing-along Cooking with Cousin Olivia She couldn't get enough of the birds Sunday : Tilapia with green beans and tomatoes -- this recipe is so quick and easy, we love it. My mom and I had tilapia, the kids had Cajun Salmon. Monday : Curried Turkey Cutlets with Apricots - (we usually end up using turkey patties, but everything else is the same) with green beans, carrots, cauliflower and broccoli. Tuesday : Chicken Salad . Might as well use some of those apples I brought back from NorCal Wednesday : Mahi Mahi Grilled Fish Tacos Thursday : Steak Salad Friday : Turkey and Spinach Stuffed Sweet Potatos  - I love PaleOMG because she introduced me to sweet potato brownies. Disney Cruise Line Recipe: Grilled Tuna with Truffle-Infused Potato Risotto

I loved dining at Palo, but did not try this particular meal. Now I need to go buy some tuna steaks and substitute in some Paleo friendly risotto. Don't forget steamed veggies on the side. And for mom, some Moscato :) Grilled Tuna Ingredients  4-6 tuna steaks salt and pepper to taste olive oil lime juice Directions : Place tuna steaks and olive oil in a large resealable plastic bag. Seal, and refrigerate for 1 hour. Preheat the grill for medium heat. When coals are very hot, scatter a handful of hickory or mesquite wood chips over them for flavor. Lightly oil grill grate. Season tuna with salt and pepper, and cook on the preheated grill approximately 6 minutes, turning once. Transfer to a serving platter, and drizzle with freshly squeezed lime juice. Menu Plan Monday: Holy Week

Well, it’s Palm Sunday and the end of our Spring Break. My daughter had a good transition night. I hope this translates into a good (stress-free) morning. It’s getting pretty late, so this will be quick. The last few weeks have kind of sucked and I’m still processing them. Today was the first time that I went grocery shopping in two or three weeks and most of it was for Easter. Sunday : Salmon, baked sweet potato, and California style vegetables Monday : Beef fajitas – I’ll be eating the meat and veggies, no tortilla … I might have to buy more meat Tuesday : Chicken and … sweet potato. I have jerk seasoning and I do love that Claim Jumper recipe. Not being able to do rice, beans or lentils is starting to suck. Though if I can find some spaghetti squash I’ll try this Lemon Chicken and Broccoli recipe. Wednesday : Leftovers Thursday : The night Christians remember the Last Supper. I haven’t decided what I am going to cook yet. I would love to try Gumbo Z’Herbs , but I’m not sure...

Menu Plan Monday: Paleo Edition

Carb deprivation has me and my daughter at each other's throats. I'm used to it, but her eye doctor just told us that she needs to cut back on refined sugar and refined carbs (not a problem at my place since I cut that shit out of our diets over a year ago, but I think it might be at her dad's). Lack of physical activity since October ( sprained wrist, in splint for almost six weeks) has her gaining weight and mental anguish.  She's built like her father instead of me. It's a clusterfuck. And every time she asks for something to eat, it's purposefully  UNHEALTHY ! I just sent her to bed as if she was five. Because she was acting like she was three. And you wonder what the heck any of this has to do with this week's menu plan?
