Menu Plan Monday: Summer Salads

And the cleansing continues. Salads are also great for portion control as well as clearing out the system. Drink plenty of water! Monday : Not feeling well, take out it is. Tuesday : Steak and Dried Cherries Salad - one 3/4lb rib eye goes a long way for two people. Wednesday : Grilled Chicken Strawberry Avocado Salad Thursday : Broccoli Chicken Salad with dried cranberries, modified from this recipe. Friday : Cirque! Hopefully dinner out.

Menu Plan Monday: April Fool's

I kind of feel like one. An April Fool that is. Last week I winged it and didn't plan anything because the week was so busy. The result -- I cooked once, maybe twice and we ate out more than I like. But I think the leftovers from the last week and a half are gone! I was in Texas stretching my social media wings this weekend and trying to jump back into things at home and work today. The best part of the weekend was spending some quality time with my son's godmother. We haven't seen in each other in over a decade! I don't know how some of the mom bloggers do so much traveling and keep it together at home! Let alone keep up with chores and stuff -- but then, I only really have the weekend to do that. Almost makes me miss being a SAHM. Almost. So, what am I planning this week? Monday : grocery shopping for the rest of the week's meals and Costco pizza (you can't beat the price!) Steak Fajitas

The next few weeks, recipes will be brought to you by Since I know from experience that Fresh and Easy isn't everywhere, I will provide ingredients and/or substitutes where necessary. Bon apetite! Ingredients: If shopping at F&E 1 pack F&E Beef Fajitas 1 pack F&E Whole Wheat Tortillas 1 bottle F&E Ranch Dressing 1 bag avocados 1 count iceberg lettuce If shopping at a regular grocery store: 1 lb. flank or bottom round steak, thinly sliced 1 onion, sliced 1 green and/or red bell pepper, cut into strips 1 pkg. fajita seasoning 1 dozen (whole wheat) flour tortillas 1 bottle ranch dressing 4 avocados (preferably Haas) 1 head iceberg lettuce Directions : Pit and remove avocados from their skin and place in a mixing bowl. Add 1-2 tablespoons of ranch dressing per avocado to the bowl and mash with a fork (or blend in a blender like my mother did). Set aside. Take lettuce and cut head in half, shred thinly.
