Menu Plan Monday: Something Different

Guess what?!? I am NOT doing a Whole 30 this year! This year we will be starting the year with Round 2 of a 21 Day Fix. After stuffing ourselves fuller than a Thanksgiving (or Christmas) turkey, we're kind of sick of food. Or at least rich foods. Y'all, I am craving arugula and brussels sprouts. Brussels Sprouts!!!

I'm on Meal Plan B which, to me, has a lot of wiggle room and variety, provide I stock up on things and go shopping for fresh fruit on a regular basis (hello higher step count). Carrying groceries home is like an extended kettlebell carry.

Breakfast Menu

Keep it Simple - 

  • Overnight Oats (so many options! Personally, I like the Maple and "Brown Sugar" and I make one with chocolate and frozen berries)
  • eggs and turkey bacon  (sometimes with avocado if I can find one) 
  • protein shakes
  • And on Sundays, shakalatkes.

Lunch Menu

Still keeping it simple for myself - canned or bagged smoked salmon (gotta get those omega-3s), spinach salad, portion-controlled amount of cranberry, and nut toppings with an olive oil and lemon dressing. Or leftovers, if there are any.

Dinner Menu

In no particular order and there will probably be some repeats (and I'm going to have to edit some of these to make the more GF/paleo-friendly):

Crispy Fish Taco Bowls

Curried Chicken with Couscous/Quinoa

  • 1/2 Purple

  • 1/2 blue

Steak Fajitas

  • 1 Green

Almond Crusted Chicken

  • 1 Green
  • 1 Red

Beef Stew with Sweet Potatoes

  • 1/2 Green

Turkey Chili (with butternut squash for added veggies) - I should write up my usual recipe for turkey chili.
